Spicy Rapini / Broccoli Rabe - Recipes for Broccoli Rabe
  • 1 Bunch of Rapini / Broccoli Rabe
  • Red Pepper Flakes (to your taste - I used about 1 tsp)
  • A couple of shakes of Garlic Powder / Onion Powder
  • 2-3 tbs Nutritional Yeast
  • Optional: "Parmesan" made from Almonds (A great but more expensive alternative is to use Pine Nuts), Nutritional Yeast & Garlic Powder
  • 1 tbs Extra Virgin Olive Oil / Sesame Oil for frying
Tip for handling the rapini: Tongs make handling the rapini in the skillet very easy and makes sure they all get cooked evenly.
Almond Parmesan: I just quickly added some almonds, nutritional yeast and garlic powder into my Magic Bullet and ground up until the consistency of parmesan cheese and then you can either add it on top at the end on while the rapini is cooking in the skillet.
  1. Wash Rapini. Chop off the very ends of the stems and chop the rest of the rapini into three sections.
  2. Heat oil on non-stick skillet to low-medium heat. Add in the rapini and sprinkle on the red pepper flakes, garlic powder, onion powder and nutritional yeast. Toss around the rapini with tongs so that all the dry ingredients go evenly onto it.
  3. Cook for about 5-6 minutes, tossing occasionally. You want the rapini to be a dark green colour and wilted, but don't over cook so that they loose a light crunchy/firm texture.
  4. Remove from heat and serve next to almost anything. I have made these for the past two nights. The first night, I served them with Portobello Mushroom Burgers and last night I served them with Black Bean burgers. You can squeeze some fresh lemon on top of the rapini or some low-sodium soy sauce, but they are going to be quite flavorful already with the ingredients we added. :)
