Lemon Date Scones (low fat)

Ingredients
  • 1 cups white flour
  • 2 cup whole wheat flour
  • 4 tsp baking powder
  • ⅔ cup raisins or dried cranberries
  • 3 tbs extra virgin olive oil
  • ⅓ cup chopped pitted dates
  • ⅓ cup maple syrup
  • ⅓ cup orange juice
  • ⅓ cup unsweetened almond milk
  • a few slivers of lemon zest, chopped (orange zest as an alternative)
  • couple of drops of vanilla
  • 2 tbs fat free vegan yogurt (can substitute this for apple sauce)
  • 2 tbs apple sauce
Directions
  1. Preheat oven to 425F
  2. In a bowl, add in the flour, baking powder, raisins/cranberries and chopped dates.
  3. In a small bowl, add the oil, yogurt, apple sauce, maple syrup/honey, orange juice, vanilla and lemon zest and mix.
  4. Add the liquid mixture to the dry ingredients and mix together well until you form a thick dough.
  5. Line a cookie sheet with parchment paper and spoon heaping tablespoons of dough onto a cookie sheet.
  6. Bake for around 12 minutes or until the scones are light brown.
  7. Makes approx. 25 scones
  8. *I suggest quickly heating them in the microwave for 5-8 seconds (they heat up very quickly, so be careful) before you eat them.
