Ingredients
  • 1 peach, sliced
  • 1½ tsp earth balance vegan butter
  • squirt of fresh lemon
  • ¼ cup gluten free old fashioned oats (or regular oats)
  • ½ cup unsweetened almond milk / soy / rice / hemp
  • cinnamon
  • 1 tsp raisins
Directions
  1. Add ¼ cup oats with ½ cup milk into a small pot and heat until the milk has been absorbed. Add in a bit of cinnamon if you wish. Stir occasionally so the oats don't stick to the pot. Place oats into the fridge while you prepare the peaches.
  2. Heat a non-stick skillet with 1 tsp vegan butter on medium heat. Add the sliced peach and sear on both sides for a few minutes, stirring occasionally. Add in a squeeze of fresh lemon and cinnamon to taste. Remove from heat and place on a plate or bowl.
  3. Remove oats from fridge and heat skillet with ½ tsp butter to medium heat. Form a patty with the oats and sear on both sides for a few minutes. It's ok if it's a little crumbly.
  4. Place on a plate next to the peaches and top with raisins, additional cinnamon and a sprinkle of dry oats if you'd like. You can even drizzle some maple syrup on top. Enjoy!
