Spicy Curry Chickpea Burgers
  • 1½ cups cooked chickpeas (I used about ¾ of a can of chickpeas)
  • ½ cup rolled oats
  • ⅓ cup chick pea flour/regular flour
  • 3-4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp curry powder
  • Cayenne & Ground Black Pepper (to your taste)
  • ½ tsp baking soda
  • 2 tbs lemon juice
  • 1 tbs natural peanut butter
  • 3-4 kale leaves, stems removed and finely chopped
  • handful of pepitas and sunflower seeds
  • handful of thompson raisins
  • 2 tbs extra virgin olive oil / coconut oil (one for mixture and one for the skillet)
  1. Get out a large bowl. Put the chickpeas in a food processor and process until fully processed. Add chickpeas to the bowl.
  2. Add in the rest of the ingredients (except for 1 tbs of olive oil) and mix well.
  3. Lay out some parchment paper or a cutting board and sprinkle a small amount of flour. Start forming patties with the chickpea mixture and lightly flour them.
  4. Heat 1 tbs olive oil on a nonstick skillet on medium-low heat. Once heated, add the patties and let cook for a couple of minutes. Flip them over and let the other side cook. Both sides should be a toasty brown color and slightly crispy.
  5. Remove from heat and serve.
  6. Some topping ideas are romaine lettuce, spinach, hummus, horse radish, tomato slices, alfalfa sprouts and spicy mustard.
