Vegan Fig Chocolates - Chocolate-Covered Figs
  • 1 tbs cacao powder
  • 1-2 tbs coconut oil
  • pinch sea salt
  • ¼ tsp pure vanilla extract
  • agave nectar / honey / coconut nectar / maple syrup, to taste (start with less)
  • dried figs, blended into a paste, hard stems removed beforehand
  • optional: cacao nibs, shredded coconut
  1. Get out a blender and blend the dried figs until they are a paste-like consistency. Put aside for now.
  2. Next, get out a pot and add a table spoon or two of coconut oil. Add in about a tablespoon of cacao powder, pinch of sea salt, ¼ tsp vanilla extract and liquid sweetener and use a spatula to mix everything together until it is smooth. I appologise for lack of specific measurements, but I rarely use measurements when making vegan chocolate - you just have to experiment, as some people prefer sweeter chocolate and others like it to be more on the bittersweet side. As you're making it, allow some of the chocolate to cool on your spatula and do a taste test, to see if it is sweet enough for you.
  3. Get out silicon cupcake liners or something similar and pour enough chocolate into each one so it covers the bottom. Place a small flattened scoop of the fig paste on top and then drizzle more of the chocolate on top of that.
  4. Pop them in the freezer/fridge until solid and enough! Keep them stored in the fridge. They should keep for quite a few days.
