Fast Vegan Chocolate Pudding
Makes 4 servings - each serving approximately ¾ cup of pudding. Around 140 calories per serving. (I added 1 tbs of Enjoy Life Mega Chunk chocolate chips, so the calorie count will be slightly lower if you don't add that in)

  • 4 tbs corn starch
  • 2 cups unsweetened almond milk
  • 1 tbs xylitol
  • 2 tbs coconut sap / date sugar
  • 1 tbs agave nectar
  • ¼ cup + 1 tbs cacao powder
  • 1 tsp vanilla extract
  • pinch of sea salt
  1. Get out a small bowl and add in ½ cup of the almond milk and the rest of the ingredients. In a pot, add in the other 1½ cups of the almond milk and start to bring to a boil. Whisk and thoroughly mix the ingredients in the bowl so that there are no more lumps.
  2. Add the mixture in the bowl to the pot of milk and frequently stir. Once it starts to boil, lower the heat to medium-low and continue to stir for a couple of minutes until the pudding thickens. (It will thicken more when it sets in the fridge).
  3. Remove from heat and allow to cool before serving. I prefer to let it set for a few hours in the fridge so it is chilled and thicker, but you may enjoy it warm! I distrubuted the pudding into 4 glass ramekins with lids using a ¾ measuring cup.
