Single Serving Blueberry Oat Cake
  • ¼ cup rolled oats (gluten-free if needed)
  • 1 tbs chia seeds
  • 1 tbs unsweetened almond milk
  • 1 tsp corn starch
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 2 tbs unsweetened apple sauce
  • ½ small banana
  • 2 tbs frozen/fresh blueberries
  • optional: square of vegan dark chocolate, chopped into small pieces
  1. Preheat oven to 375F
  2. Mix all ingredients in a bowl. Spread onto a piece of parchment paper on a baking sheet.
  3. Bake for 15-18 minutes (depends on how thick you have made it and how soft/hard you want it!). Serve with some fresh fruit, syrup, jam, peanut butter or on its own!
