Gluten-Free Vegan Pizza Crust – Chickpea Flour Crust – Socca Crust – Healthy Vegan Mini Pizza

This is what I call a simple, yet perfect recipe. It’s really quick to whip up. Chickpea flour + water for the crust, spread on some tomato sauce and throw on some veggies and vegan cheese and you have a lovely little 1-2 serving pizza. :)

Serves: 1-2
Ingredients
  • 1 cup chickpea/besan flour
  • 1 cup water
  • few broccoli spears, cut into small pieces
  • vegan cheese slice (or Daiya shredded cheese)
  • 2-4 tbs tomato sauce
  • ½ tbs nutritional yeast
  • ¼ tbs italian seasoning
  • 4 vegan pepperoni slices
  • pineapple chunks, optional
Directions
  1. Preheat oven to 350F. Get out a small bowl and add in the chickpea flour and water and mix well. Get out a small brownie pan or round cake dish. Just make sure it isn’t a sheet or the mixture may drip over the edge. Pour the batter evenly into the pan and pop into the oven for around 10-15 minutes, or until the chickpea crust is a little toasty around the edges.
  2. While the crust is cooking, you can get out the rest of the ingredients. When the chickpea crust is finished, remove from the oven, give it a few minutes to cool and carefully loosen it up and remove from the pan. Place the toppings I’ve included (or those of your choosing) on top of the crust and pop in the oven for a few minutes, or until it is heated and the cheese has melted.

My local store is out of chickpea flour :( Do you think that I would have similar results with brown rice flour?

  2. Clare says:

Hey Tonya! Hmm, I use brown rice flour in quite a few things, but it is a bit grainier than chickpea flour (or at least the kind I get), so without testing it, I’d be afraid to give an opinion, since it may end up being a bit crumbly. I can add brown rice flour pizza crust to the list of recipes I test out for the site though and give it a go in the future. :) If you want to sign up for recipe notifications, you can click on “Subscribe by Email” on the right hand side, or like Calm Mind Busy Body on facebook in case I post a brown rice flour pizza crust recipe. Anyway, thanks for stopping by! –Clare
