This Kelp and Kale Salad is something I’ve been making weekly for the past few weeks. A little goes a long way, as it’s chewy and you’ll find a small portion will take a while to eat. It really doesn’t take long to make, aside from soaking the kelp, which you’ll want to do for 4-6 hrs. The longer you soak the kelp, the easier it will be to eat, and kelp expands a lot in relation to its dry state. I’ll link a dressing recipe that goes well with this, but if you have a favorite dressing, try it out with this salad!
How to prepare Kelp Kale Salad
Ingredients
- Bunch of Kale
- A few pieces of dry Kelp (It expands a lot, so you don’t need a whole lot!) Or Pre-soaked Kelp
- Dressing – Try a Raw Ceasar Dressing
- Optional: Cooked Quinoa, Kasha, Barley…


Directions
- Thoroughly wash the kale and remove the leaves from the stems.
- Get out a bowl and tear the kale leaves into small, bite-sized pieces. Massage the kale for a minute or two to break it down so it’ll be easier to eat. (The dressing will help to further break down the kale)
- Take your pre-soaked Kelp and cut into small pieces or strips. Add the kelp in the bowl with the kale.
- Take your dressing and pour over the salad. Massage the kale again and cover it all in the dressing.
- Another idea is to take about 1/4 cup of cooked Quinoa (or Kasha, Barley…whatever you’d like) and sprinkle it over the salad.
All done! I bring some of this salad to work with me for lunch, or have it with a bit of homemade soup for dinner.
