Lemon Date Scones (low fat)

Last week I was feeling rather sick for a few days, and I kept craving something sweet and instead of baking a cake (this is a little bit of an exaggeration :o)), I looked around at scone recipes. Might seem like a strange choice, but I think all I needed was something to have with my Echinacea tea. Healthy comfort food if you will. I looked around at different scone recipes and then tried to create a version that was a little healthier. This is my first time making scones, and I think they are pretty good! Even better when you heat them for a few seconds. However, I was almost out of a few ingredients, so I will add annotations to the recipe so you can stick to the recipe or try out some other suggestions. The next time I make them, I am going to fiddle around with the ingredients slightly.

I think these are the perfect sort of thing to have with a morning coffee or tea. Too bad they are all gone now. 🙂


Lemon Date Scones (low fat)

Ingredients
  • 1 cups white flour
  • 2 cup whole wheat flour
  • 4 tsp baking powder
  • ⅔ cup raisins or dried cranberries
  • 3 tbs extra virgin olive oil
  • ⅓ cup chopped pitted dates
  • ⅓ cup maple syrup
  • ⅓ cup orange juice
  • ⅓ cup unsweetened almond milk
  • a few slivers of lemon zest, chopped (orange zest as an alternative)
  • couple of drops of vanilla
  • 2 tbs fat free vegan yogurt (can substitute this for apple sauce)
  • 2 tbs apple sauce
Directions
  1. Preheat oven to 425F
  2. In a bowl, add in the flour, baking powder, raisins/cranberries and chopped dates.
  3. In a small bowl, add the oil, yogurt, apple sauce, maple syrup/honey, orange juice, vanilla and lemon zest and mix.
  4. Add the liquid mixture to the dry ingredients and mix together well until you form a thick dough.
  5. Line a cookie sheet with parchment paper and spoon heaping tablespoons of dough onto a cookie sheet.
  6. Bake for around 12 minutes or until the scones are light brown.
  7. Makes approx. 25 scones
  8. *I suggest quickly heating them in the microwave for 5-8 seconds (they heat up very quickly, so be careful) before you eat them.
