Raw Mint Chocolate Cookies – No Bake Cookies

Last night I had a wicked sweet craving and had some almond meal in the pantry so I decided to just make a little treat and this is what I came up with – Raw mint chocolate cookies! No bake cookies that are gluten-free and full of yummy ingredients.

 
Ingredients
  • Almond Flour/Meal (I used around ½ cup)
  • Pitted Dates (around 1½ cups, but add more if needed)
  • A handful of rolled oats (I used a muesli mixture which as muesli, sunflower seeds and oats)
  • Tiny amount of Pure Peppermint extract (like 3-4 drops)
  • ¼ tsp Vanilla Extract
  • 4-5 Drops of Sweet Leaf's Vanilla Creme (optional)
  • A few shakes of cinnamon and/or nutmeg
  • A few tbs of Raw Cacao powder
  • 1 tbs Raw Honey / Agave / Coconut Nectar
  • Either: Carob chips, cacao nibs, chocolate chips (as many as you've like. I put a few tbs in)
Directions
  1. Grind up the dates so that they are in small pieces. Add into a bowl along with the almond meal, oats, cacao and chips. Mix a bit.
  2. Add in the vanilla extract, vanilla creme, peppermint extract and honey. Mix with a spatula and then with your hands (it makes it a whole lot easier, even though it's a bit messy :)) Add in more dates and/or honey if your mixture isn't quite holding together enough.
  3. Take a small amount of the mixture and form into a ball, then press it between your hands to form a small cookie shape. Place cookies in a container and put in the freezer. You can also eat them straight away but they firm up a bit when in the freezer.

  3. Hi there Tracee! I use WordPress for Calm Mind Busy Body. 🙂 It is the only blog platform I have used and I find it to be very easy to and flexible, for the most part. Writing and posting blog posts are super easy and save me a lot of time. There are also tons of free layouts out there, so you should be able to find something you like, and customize it so it is more unique. Hope this helps! Cheers –Clare

    be in for a increased shock due to the fact toddlers adore to rip
    off wall papers or leave a stamp of their artistic attempts on that wall paper.
    There will be plenty of surprising and exciting features during the game.
    Give the kids time to play with their stars as they “shine their twinkle stars in the sky” and sing Twinkle, Twinkle Little Star.
