I made this salad on the 1st day of the Raw Food Rehab 11 Week Initiative . I wrapped the salad in big romaine leaves and it was sooo good. I have plenty of leftovers for today too!

Ingredients
- 2 1/2 – 3 cups finely chopped cabbage / dry cabbage coleslaw (mine had carrots mixed in)
- 1/4-1/2 cup julienned carrots
- 4-6 black olives, chopped
- 1/2 cucumber, chopped
- 4-5 mushrooms, chopped
- 1 avocado, sliced into small pieces
- 1/3 cup snow peas, chopped into halves/thirds
- 1 tomato, chopped
- 2-3 tbs chopped fresh cilantro, chives & parsley
- 1/4 cup nutritional yeast
- romaine lettuce (if making lettuce wraps)
Spicy Dressing: (inspired by a dressing by Penni Shelton)
- 1 finger pepper, seeds removed and pepper finely chopped
- 1 lime, juiced
- 1 tbs extra virgin olive oil
- ground pepper, to taste
- 1 tsp cumin
- 1/4 tsp (Himalayan) pink sea salt
Directions
- Add all ingredients into a large bowl. In a small bowl, add in all the Spicy Dressing ingredients and mix together. Pour over the salad, toss and serve immediately or let everything marinate for 1-2 hrs in the fridge.
Serve as a salad or in romaine lettuce wraps.
