Raw Spicy Cabbage Avocado Salad – in Romaine Lettuce Wraps

I made this salad on the 1st day of the Raw Food Rehab 11 Week Initiative . I wrapped the salad in big romaine leaves and it was sooo good. I have plenty of leftovers for today too! :o )

Ingredients

  • 2 1/2 – 3 cups finely chopped cabbage / dry cabbage coleslaw (mine had carrots mixed in)
  • 1/4-1/2 cup julienned carrots
  • 4-6 black olives, chopped
  • 1/2 cucumber, chopped
  • 4-5 mushrooms, chopped
  • 1 avocado, sliced into small pieces
  • 1/3 cup snow peas, chopped into halves/thirds
  • 1 tomato, chopped
  • 2-3 tbs chopped fresh cilantro, chives & parsley
  • 1/4 cup nutritional yeast
  • romaine lettuce (if making lettuce wraps)

Spicy Dressing: (inspired by a dressing by Penni Shelton)

  • 1 finger pepper, seeds removed and pepper finely chopped
  • 1 lime, juiced
  • 1 tbs extra virgin olive oil
  • ground pepper, to taste
  • 1 tsp cumin
  • 1/4 tsp (Himalayan) pink sea salt






Directions

  1. Add all ingredients into a large bowl. In a small bowl, add in all the Spicy Dressing ingredients and mix together. Pour over the salad, toss and serve immediately or let everything marinate for 1-2 hrs in the fridge.

Serve as a salad or in romaine lettuce wraps.
