Raw Mini Blueberry Cake with Cashew Icing – Eggless cake recipe

I was running out of raw food dessert ingredients, plus I had a ton of blue berries that I didn’t want to go to waste so I made this little cake. It tastes soo good and light and fresh. It’s a lovely little cake to whip up. The cashew icing is good enough to want to eat on its own, but I refrained, for the most part. You could replace the blueberries with raspberries or blackberries and I’m sure it would turn out just as good.

Cake Ingredients
  • 1 cup of raw Almonds
  • 1 cup of Pitted Dates
  • 1½ cups Fresh Blue Berries
  • ½ tsp of both Nutmeg & Cinnamon
  • ¼ tsp Sea Salt
Cashew Icing Ingredients
  • ¾ cup Raw Cashews (soaked for 2-3 hrs)
  • A little under ¼ cup water
  • 1 tbs Honey / Thick liquid sweetener (you can also try using some stevia, although I haven't tried it with this yet)
  • 1 tsp Fresh Lemon Juice
  • 1 tsp Pure Vanilla Extract
  • 1½ tbsp Coconut Oil / Extra Virgin Olive Oil
  • A tiny pinch of Sea Salt (I used Himalayan Pink Salt)
Directions
  1. First, we'll start making the "cake/crust" part, and then the icing can be made later. So, blend the almonds and the dates and add in the nutmeg and cinnamon and salt. Process until chopped into very small pieces. You're already half-way done at this point! (not including the icing)
  2. Get out a small pan. The small tinfoil pie dishes seem to work well. Perhaps even a Ramekin. Add a layer of the mixture into the pan/dish and press firmly and evenly so it's packed. Then, add a layer of blueberries, another layer of the mixture (pack again), another blueberry layer and then a final mixture layer on top and pack. Cover dish to keep the mixture fresh and pop into the freezer while you prepare the icing.
  3. Blend the soaked cashews, water, lemon juice, oil, vanilla, honey and salt together until smooth.
  4. When the cake has had some time to firm up in the freezer, take it out and carefully remove from the pan and place on a plate. Smooth on the icing with a spatula and top with blueberries if you choose. I went a little too crazy with decorating it, so mine looks a little...horrible, haha. But I promise it tastes delicious!
  5. Keep in the freezer until ready to serve.
