Raw Spinach Walnut Dressing Sauce

This raw spinach sauce is delicious and it smells great! Wonderful on pasta, salads, spaghetti squash, zucchini fettuccine, butternut squash… very fast to make and all you need is a blender or food processor.

 

Raw Spinach Walnut Dressing Sauce

Ingredients
  • 4 cups spinach
  • 1-2 garlic cloves
  • ½ cup walnuts (or cashews)
  • ¼ cup water
  • 1 tbs lemon juice
  • 1 tbs extra virgin olive oil
  • ¼ tsp nutmeg
  • ¼ tsp thyme
Directions
  1. Throw all the ingredients into a blender and blend till smooth. And then it's done and ready to eat! :)

    I was looking for a way to use up some spinach that was floating around in my fridge. I thought the recipe looked kind of “meh”, but quick and easy to prepare.

    And boy, were my expectations confounded! This sauce is super delicious and went most excellently over some whole wheat pasta and topped with marinated, grilled tofu. Thank you so much :)
