I’ve been organizing and looking through old recipes on the site and want to revisit certain ones and take better photos for some of the ones I either rushed or had horrible lighting for. I realized I hardly have any Breakfast recipes, mostly because I tend to do the same old things every morning. I’m going to try to get some more up in the coming weeks. I had two lovely peaches sitting on the counter and decided to use one of them to make this easy yummy breakfast.
Serves: 1
Ingredients
- 1 peach, sliced
- 1½ tsp earth balance vegan butter
- squirt of fresh lemon
- ¼ cup gluten free old fashioned oats (or regular oats)
- ½ cup unsweetened almond milk / soy / rice / hemp
- cinnamon
- 1 tsp raisins
Directions
- Add ¼ cup oats with ½ cup milk into a small pot and heat until the milk has been absorbed. Add in a bit of cinnamon if you wish. Stir occasionally so the oats don't stick to the pot. Place oats into the fridge while you prepare the peaches.
- Heat a non-stick skillet with 1 tsp vegan butter on medium heat. Add the sliced peach and sear on both sides for a few minutes, stirring occasionally. Add in a squeeze of fresh lemon and cinnamon to taste. Remove from heat and place on a plate or bowl.
- Remove oats from fridge and heat skillet with ½ tsp butter to medium heat. Form a patty with the oats and sear on both sides for a few minutes. It's ok if it's a little crumbly.
- Place on a plate next to the peaches and top with raisins, additional cinnamon and a sprinkle of dry oats if you'd like. You can even drizzle some maple syrup on top. Enjoy!
