There are a bunch of spiced chickpea recipes out there – Mine isn’t anything unique, but it is delicious. I just threw what I thought would taste good together and quickly baked them up and enjoyed these with a salad, vegetables and some homemade vegan cornbread for both lunch and dinner today. The amounts of the ingredients are just estimates – I didn’t do any measuring.. just experiment and if you don’t like really spicy things, just go light on the cayenne or omit altogether.
- Preheat oven to 375F.
- Get out a bowl and add in the can of drained chickpeas. Add in the rest of the ingredients and toss until coated.
- Place on a baking sheet on a single layer and bake for 25 minutes, stirring after 15 minutes to ensure all sides are evenly baked.
