Vegan Peanut Butter Cups

Here are some chocolate peanut butter cups that you can enjoy. They are like the Reeses Peanut Butter cups, except they are made with whole vegan ingredients and don’t take long to make. Remove the peanut butter filling and just make up the chocolate and put them into pretty moulds!

Vegan Peanut Butter Cups
  • Raw Cacao
  • Coconut Oil
  • Sea Salt (I used Himalayan Pink Sea Salt)
  • Sweetener (I used Honey and Lucuma Powder, but you can substitute for another)
  • PB2 (Powdered Peanut Butter)
  • Nutritional Yeast (optional)
  • Water
*You will also need some cupcake cups/liners

  2. Raw Cacao
  3. Coconut Oil
  4. Sea Salt (I used Himalayan Pink Sea Salt)
  5. Sweetener (I used Honey and Lucuma Powder, but you can substitute for another)
  6. PB2 (Powdered Peanut Butter)
  7. Nutritional Yeast (optional)
  8. Water
  9. *You will also need some cupcake cups/liners
  10. Directions
  11. Quickly mix up some PB2, and add in a bit of nutritional yeast if you'd like. I find it adds a nice texture/flavour.
  12. Now for the chocolate: Melt some coconut oil (I end up with around 5-6 tbs of oil once it had melted, but it depends on how many chocolates you wish to make. I believe this amount made around 4 of these chocolates as well as a few peanut butter cups) and pour into a bowl.
  13. Add in a pinch of salt. Start adding in small amounts of cacao and start stirring. You want a syrup-type consistency. Don't worry, the coconut oil will cause everything to solidify quite quickly when placed in the freezer since coconut oil is solid when cold. Add in the vanilla and sweetener. Now you just had to taste-test the mixture to see if it's sweet enough for your liking, or too sweet and adjust accordingly.
  14. When you are happy with the taste, carefully pour a layer of chocolate into a cupcake liner, then add a dollop of peanut butter in the center, and then pour more chocolate on top. Do this until you've used up the chocolate and the peanut butter and then pop them into the freezer for at least 20 minutes, or until solid. If they have been in the freezer for a long time, you may want to wait 1 or 2 minutes for them to soften a touch before eating one, although they don't tend to get super-crazy hard.
